Botanical description
A biennial herbaceous plant in the family Apiaceae. Its height ranges between 6 to 20 cm. It has several stems, all of which grow from one root. The stem is standing, rounded and branching. The leaves are compound. The flowers are in compound groups of white color, the inflorescences are tent complex, and the parsley is distinguished by its pungent aromatic scent and bright green leaves. Among its types are smooth baladi and frizzy curly. Parsley oil can be obtained from the seeds.
Macedonus: A herbaceous agricultural plant of the Apiaceae family, it is grown for the aroma of its leaves and for the taste of food. It is called: Maadnos in Tunisia, Algeria, Morocco and Iraq, and in some Arab countries it is called (celery).
Al-Fayrouzabadi mentioned it in Al-Qamos Al-Muheet, and he said while describing one of the plants:
(Like a dill in its stem, its bridle and its root, except that its flower is white, and it knots a love like the love of parsley).
It was also mentioned by al-Safadi in al-Wafi bi al-wafiyyat, Ibn Abi Usayba’ in Uyun al-Anba’ in Tabaqat al-Tabaqat al-Tabiyat, Ibn Sina in al-Qunun al-Tabiya, Ibn al-Bitar in al-Jami’ Limufradat al-Dawaa’ wa al-Awwatiyyah, and al-Zubaidi in Taj al-Arous: All of them are under the name Makdunus.
Parsley in ancient medicine
Parsley is called “died” in the Pharaonic language, and the Egyptologist Grabo found the remains of the seeds and leaves of this plant in some Pharaonic tombs and confirmed that they used parsley in many medicinal recipes for many diseases.
Parsley has been used for hundreds of years, as the Pharaohs used fresh parsley as food to reduce heat and in cases of dysmenorrhea or interruption and in the form of sprays to remove infections and tumors, while they used parsley seeds to remove intestinal gases and dysuria.
The ancients used it in the treatment of stomach infections, as a solvent for kidney stones, a good laxative for the abdomen, anti-colic, anti-asthma, shortness of breath and breast tumors. Fresh leaves are used as a poultice against breast swelling, insect bites, lice and skin infections.
Respiratory treatment
Parsley is useful in asthma and respiratory disorders, and parsley juice treats bronchial infections by boiling parsley in water for 10 minutes, then drinking it several times during the day, to purify and cleanse the respiratory system.
Nutritional value
Vitamin (C), which is found in a large proportion equivalent to 4 times its percentage in lemon, as it was found that every 100 grams of parsley contains 165 milligrams of the vitamin. It helps in increasing the body's resistance to colds and bronchitis, and it is superior to lemon in that.
